Corned Beef Egg Cups
INGREDIENTS:
3 Tbsp. butter, divided
6 slices Dave’s Killer Bread White Bread Done Right®
1 shallot, diced
2 ounces corned beef, roughly chopped
1 cup baby spinach
6 eggs
¼ tsp. sea salt
¼ tsp. black pepper
1 Tbsp. parsley, finely chopped
Directions:
Preheat oven to 375 F. Prepare 6 muffin cups by lightly greasing insides of each with one tablespoon melted butter. Set aside.
Prepare the bread by using a rolling pin to flatten each slice of bread. Slice off crusts, if desired. Carefully place each slice of flattened bread into prepared muffin tins and drizzle with melted butter.
Add remaining tablespoon of butter to a large nonstick skillet. Add diced shallot and sauté for 2 minutes. Add corned beef and baby spinach and cook until shallot is golden, and spinach is wilted, about 5 minutes.
Scoop about a tablespoon of spinach and corned beef mixture into bread-lined muffin tins. Top each cup with an egg and a sprinkle of sea salt and pepper.
Bake cups for 15-20 minutes, until whites are set. Remove from oven and top with a sprinkle of parsley, enjoy!
